Meat Balls in Tomato Sauce

I had a little more time for tea preparation today so thought I’d try some meatballs – something I’ve previously steered away from.  Not any more, these are delicious and can be prepared one, or even two, days in advance. IMG_4078

I used pork mince but I’m sure they’d be equally delicious using beef mince. Seasonings are approximate – adjust to suit your taste.


  • 1 onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 2 tbsp parsley
  • 1/2 tsp dried basil
  • 1 tin chopped or crushed tomatoes
  •  65g tomato paste
  • 1/4 c chicken stock
  • 2 tbsp red wine (optional)
  • 2 tsp dried oregano
  • 1 slice bread
  • 250g mince
  • 1 egg
  • 1/4 c tasty cheese
  • 2 tbsp parsley
  • pepper
  • olive oil
  1. In a large saucepan, cook the chopped onion and 1 crushed garlic clove in a tbsp of olive oil over a low heat, stirring for 2 minutes.

  2. Add chopped parsley, basil, tinned tomatoes, tomato paste, stock, wine, sugar,  salt and 1/4 tsp oregano. Simmer the sauce, stirring occasionally for 30 minutes.
  3. In a bowl, combine bread, mince, eggs, tasty cheese, parsley, 1 crushed garlic clove, 1/2 tsp oregano, salt and pepper. Form into meatballs.
  4. Heat the olive oil in a large frying pan and brown the meatballs. Transfer them to the sauce and simmer for 30 minutes. Serve with pasta.
